I took a couple bike trips in Europe w/ Blue Marble Travel. They were two of the most fun and interesting trips of my life.
Much of their marketing is toward graduating law students and biz students at top 10 schools--so don't go in August unless you want to be with a bunch of law grads who just took the bar.
Prices are reasonable, and the guides are cool and really know their territories. I highly recommend them--there really is nothing like getting lost on a bike in the French countryside and not knowing any French. Somehow it all works out, though. And because you exercise all day, you can really gorge on European foods and still lose weight. Anyway, their website is at http://www.bluemarble.org/
