I agree with your point about selecting firms that you want to work for in principle. However, in reality, most firms are more or less the same (especially with respect to summer/junior associates), so my advice would be to take the shotgun approach to interviewing, i.e., interview with as many firms as possible (of course you should do your research about the firm so that you don't look like a dope in the interview) and hopefully you'll have several offers to choose from. Then get selective.
